5 Spice Goat Curry

Ingredients:
1kg Goat Diced ON the bone
3 red onions (finely chopped)
1 tbsp ginger+garlic paste (preferably fresh)
1 large tomato (cut into 8)
2 tbsp coriander powder
2 tsp whole peppercorn (coarsely crushed)
1 stick cinnamon
2 bay leaves
2 whole black cardamom
1 tsp cumin seeds

1 tbsp turmeric
2 tbsp oil
Salt

Method:

  • Heat the oil in a thick bottom pan. Add all the whole spices for 30 seconds before adding the ginger garlic paste and sliced onion. Cook gently until the onions begin to go translucent.
  • Add the goat meat, cooking until the meat begins to brown. Both the onion and the meat will lose water but keep stirring on a low heat for 10 minutes.
  • Add the salt, coriander powder, turmeric and tomato.
  • Stir briefly and cover with a lid. Leave to simmer on a very low heat for a 3 hours until meat is completely cooked.
  • Test the meat with a fork to see how tender it is. Once you are happy the meat is cooked through turn off the heat. The sauce is supposed to be thick, so if any liquid remains, cook off uncovered.
  • Serve with rice or cous cous and any bread/rotis.

How to best prepare and cook your Goat meat?

  • Always marinate goat meat before cooking
  • If cooking adult goat meat, you may wish to further tenderise before cooking by washing the meat in cold water, leave to soak in cold water for 30 minutes covering all of the meat and adding a splash of plain white vinegar.
  • Allow as much time as possible for cooking - a minimum of 3 hours for kid goat and 4 hours for adult goat
